I cannot make any specific recommendations as to what camera you should buy. But I would suggest starting with a decent cell phone.
I think there's a lot of little things you're going to need to do first to perfect your setup. Things like having a LOT of light, cameras get fuzzy or low frame rate sometimes when light is too low, they are more sensitive than our eyes, so bright to you might not be bright to a camera. You'll want a mount or arm of some kind that is not connected to your bench or anything you might come in contact with, maybe mounted to the wall or even hung from the ceiling. Same with your lighting and lamps, tiny little movements or vibrations will drive your viewers crazy. Plus, I always wonder how they can see what they are working on while filming. It must mean that the camera is pointing a bit towards them. You'll need to figure that out too and what works best for your bench.
Just saying there's a lot of things to figure out before you get the filming to be what you want. I'd suggest that getting the perfect camera would come after some of those things. The longer you wait to purchase, the technology and available options get better and cheaper.
